An all SS 316, fully automatic, POLY CITRUS LINE (imported from Italy) is used to extract about 1500 kg Lime Juice per hour. The bitterness is minimal in the Juice as the skin is punched to remove oils and pressed gently to squeeze the Juice. The Juice is then pumped to a pulper ( 1/32" ) and pasteurized / Preserved (with KMS ) as needed.
